Yesterday’s Home EC practical

Yesterday we made some sort of pancakes called pikelets which turned out kind of decent especially with the raspberry jam that we added at the end.

Ingredients

  • 1 egg
  • 2 tbsp white sugar
  • 1 cup self raising flour (or 1 cup plain flour and 2 tsp baking powder)
  • pinch salt
  • 3/4 cup milk
  • 1 tbsp of melted butter
  • Spray oil/canola oil for cooking

Directions

  1. In a bowl, beat the egg and sugar until mixture has thickened and turned pale. (I use an electric hand mixer for this, but you could do by hand.)
  2. In another bowl, sift together the flour and salt (and baking powder if using plain flour).
  3. Pour the egg mixture, the milk and melted butter into the dry ingredients, and mix until just combined.
  4. Heat some oil in a non-stick frying pan on the stove to a medium heat.
  5. Drop in mixture. When bubbles begin to form, flip each pikelet over to cook the other side. (Add a little extra oil, or spray oil to the pan after every couple of pikelets as needed to stop them sticking).
  6. Serve immediately, with a drizzle of maple syrup and fresh fruit or cream and jam!
  7. Once cool, these can be frozen and reheated in the microwave when needed.
