We have been learning how to make rēwana bread for our puanga breakfast.
What was challenging was when I had to peel the potatoes for our natural yeast, was that the potato was slippery .

Monday 29th June 2026 steps.
One potato 6 ¼ of flour 6 tablespoons of sugar 1/3 quarters of potato water. Prep: 1 warm mashed potato ¾ cup of potato water 1 cup of flour 2 tsp of sugar. Mix into thick paste keep it extra warm (22c) to jump start wild yeast
Monday 29th June 2026
Today we started to make our bug for our rēwana bread. It’s like natural yeast. I was pretty excited to make it actually. First I peeled our potatoes which felt very slippery.Then Dustan cut the potato into little pieces. After he cut our potato he put the pieces into some boiling water. Then whaea Sarah assigned Amarni to check our potatoes every few minutes to see if the water was boiling. Then when the potatoes had finished boiling whaea Sarah used a sieve to get the hot potatoes out. Then she put the potatoes into our bowl ready for Elliot to mash. After he mashed the potatoes they smelled REALLY GOOD! Then I got up and got the hot water for the mashed potatoes. Then Amarni could put 1 cup of flour in and 2 tablespoons of sugar onto the mashed potatoes and hot water. When Amarni did that it made all the ingredients look like something kinda like dough. Then when it was all mixed up she put it in an ice cream container and put her name on the lid. Then we cleaned up and the hall smelled really yummy.Then finally we put the bug in a warm place.
Tuesday 30th June 2026 steps
½ cup of flour, 2 tsp sugar and ½ of warm potato water. Feeding time! The wild yeast is eating the sugars and creating bubbles.

Today we found out that the bug’s container was not good for it because it needed air and it got all wet! Then we had to see if the bug had changed. This is what we noticed : The bug had become very moist and watery. Then we noticed that it became really chunky. Then we had to smell it. It kinda smelt like pancake mixture and then it smelled like bananas.
Finally we had to feed the bug. First Amarni added ½ cup of flour to the bug. Then Dunstan added 2 tsp to the bug. Then Amani again put ½ cup of potato water on the bug. Then I had to mix it all up. At first it was hard to mix but then it became easier all of a sudden. Dustan and Amarni help out with some of the mixing. Finally we found out that we needed to add a paper towel on top of the container so the bug would get more air. Then Amarni wrote our names on the paper towel and we are letting the bug rest as we speak!

Wednesday 1st 2026 steps
1 cup 2 tsp of sugar and ½ of warm potato water. The bug is still active smelling sweet sour and is ready for tomorrow’s bake.

Today we had to feed the bug again and it looked way better! It wasn`t so clumpy like yesterday it looked way smoother but it didn’t smell any different. We had a few air bubbles so that is really good because that means the process is working. Today Mia came back so we had more hands on deck! We fed the bug these things : I put in 1 cup of flour, Dustan put in 2tsp of sugar and Mia put in ½ cup of warm potato water. When we fed the bug it went all clumpy again and then… I touched it. It dried really fast and went powdery. When we smelt the bug it smelt like pancake mixture a bit but it was kind of a sweet and sour smell together.
Thursday 2nd July 2026 steps
Take out 2 cups of the active bug and add 1 tsp of baking soda to the dough. Baking soda reacts with starter acid. To guarantee a perfect classroom rise.

Today we had to check the bug once again. What my group had noticed was that the bug had a weird layer on top of it and it made the bug look REALLY THICK, like really thick. After we looked at it we had to smell it. Yes, smell it. When we smelt the bug it smelt kinda sour and it also smelt like a pancake mixture with way too many eggs. After we finished smelling the bug we had to make the dough for the bread! When we had to make the dough I wondered if it would be like our fried bread dough. These are the ingredients that we used : 4 cups of flour, 1 teaspoon of salt, 1 teaspoon of baking soda, 2 cups of our bug , 2 cups of warm water and two tablespoons of sugar. To start our process of making the dough Amarni got our flour. Then I got the salt, sugar, and baking soda. When I got those things we had to mix them all together in a big bowl. Me Elliot, Dustan and Amarni all had turns mixing all the dry ingredients. Then we had to get the wet ingredients which was the potato water and some of the bug. Dustan went to get the potato water with our dry ingredients in the bowl. Then we had to put in 2 cups of our bug in. when we put our bug in we had to use a quarter cup so we used 8 cups. The bug was pretty heavy in the measuring cups. And then finally we mixed all the ingredients together and put the dough on the table with some flour and kneaded it all together.
